Now, let me tell you why these cookies are perfect for any and every occasion. Not only are they SO good to eat, but they're also a fantastic way to use up those overripe bananas lounging in your kitchen. Say goodbye to old bananas and hello to a delicious cookie!
The Perfect Cookie
Although I am a HUGE fan of banana bread, these are way easier, and way faster. I’m not usually the one who looks for a healthy treat. If it’s a treat, it is meant to be bad for you—lots of sugar and calories. However, when I find something that is delicious plus it’s healthy, it’s like I’ve won the lottery.
These cookies can be a perfect treat for you if you’re trying to eat a little bit healthier but have a major sweet tooth, like me. These chewy little cookies are perfect for almost any occasion! They also make a perfect treat for children, if you want them to eat better but they can’t handle not having a sweet treat.
Delicious and Healthy
This week I wanted to add something new to my page. These cookies were different than any other recipe I’ve shared because of the ingredients in the cookies. They really are so healthy for you and they taste like a million bucks. These cookies only have three main ingredients and additional chocolate chips if your heart desires. They are easy, sweet, and healthy! Plus, they're packed with fiber, potassium, and protein, making them an ideal snack or guilt-free dessert option.
Something else that I adore about these cookies is how simple they are to make. You don't need a laundry list of crazy ingredients or hours of prep time. You also don’t have to be a 5-star baker to make these crazy good treats. Who knew you didn’t need a complex recipe to make a gourmet cookie?
Where Did This Recipe Come From?
I have had this recipe for many years. It wasn’t passed down from my mom or anyone in my family for that matter. I found it from an old family friend who made these for a class she was teaching. Of course, I stole one from her plate of cookies because they looked amazing. After trying one, I knew I needed the recipe. She told me how easy they were to make but I totally didn’t believe her because they were SO good.
I recently made these for my husband who had never had them before. He was sure he wouldn’t like them because he also has a super sweet tooth. If it’s over-the-top sweet for you, it’s normally perfect for us. Especially after seeing what was in the cookies, he didn’t think they would be good. Let me just tell you right now, he thought they were amazing and ate too many that night.
What You Need
As I said before, this recipe takes 3 main ingredients, and that’s about it. The logistics to make this recipe need a few items, but nothing that isn’t already in your kitchen at home. You’ll need a mixing bowl, large or medium depending on how many cookies you are hoping to make. The recipe makes about 16-18 cookies so you could double or half the recipe for your individual needs.
A fork, measuring cups, and a mixing utensil are also needed for best results. You also need a baking sheet and an oven to actually bake the cookies. Probably the most difficult thing that you will need is bananas. Seems pretty easy right? You want your bananas to be a little overripe. If you have some fresh, beautiful, yellow bananas, you may want to wait another day or two.
Recipe
2 Ripe Bananas
1/4 Cup Peanut Butter
1 Cup Quick Oats
Honey (extra)
Maple Syrup (extra)
Vanilla (extra)
Chocolate Chips (extra)
Raisins (extra)
First, preheat your oven to 350 degrees before you start baking. Start by mashing the bananas in your large or medium-sized mixing bowl. Once mashed well, add your Peanut Butter and Oats. Stir until combined. If you would like to add any extras, now is the time! Measure with your heart for any of the extras.
Be sure to line your baking sheet with parchment paper or spray your pan to prevent sticking. Using a spoon or cookie scoop, drop dollops of the dough onto the prepared baking sheet, spacing them a couple of inches apart. Then, gently flatten each cookie with a spoon or fork to your desired cookie size.
Pop those cookies into the oven for about 10-12 minutes or until golden brown on top. Once finished baking, remove from oven and let them cool for a few minutes (2-5) before removing to a baking rack.
Personally…
I wouldn’t add both Maple Syrup and honey. Either one will work to add a little extra sweetness. However, adding both might confuse the sweet flavor. Adding chocolate chips or raisins are also extras that are a great addition to the cookie.
Personally, I don’t add any syrup, honey, or vanilla, but I do add chocolate chips. I think it adds the perfect amount of chocolate to your cookie and adds the sweetness it needs to be perfect! If you have children, adding chocolate chips or raisins helps to add a little something and makes it feel like they’re eating chocolate chip cookies instead of this healthy alternative.
